Salt Hotels has announced the debut of its latest property, The West Hotel, in Minneapolis next year. Located a stone’s throw from the Mississippi riverfront in Minneapolis’ North Loop, the property encompasses a modern structure integrating four historic buildings.
The West will have 123 guestrooms and an expansive lobby housed in a former brass foundry, including communal workspaces, fireside lounge, library and bar. It will also have a stone cellar cocktail bar, a rooftop bar with an outdoor terrace with views of the city, an outdoor dining patio and six flexible event spaces perfect for meetings, social gatherings and celebrations.
Spearheading culinary operations is local James Beard Award-recipient chef Tim McKee. His signature restaurant will offer Basque-inspired food drawing from the cuisines of northern Spain, with a particular focus on San Sebastián, Bilbao and Pamplona. The menu will include dishes primarily cooked over charcoal, with a strong emphasis on Basque pintxos. Chef McKee will also launch an Eastern Mediterranean-inspired bakery with a wood-fired oven. McKee will also operate the culinary offering in the hotel’s events and in-room dining program.
The hotel’s exterior is designed by Snow Kreilich Architects, and the interior architecture and furnishings are designed by Neri&Hu. The guestrooms will house custom-designed contemporary wooden cabinetry and furniture, expansive windows, clean lines, lush fabrics, commissioned original art and amenity filled bathrooms. Rooms in the historic buildings also have exposed brick walls evoking their 19th-century pedigree.

Opening in late 2023, The West adds to Salt Hotels’ strong pipeline of openings, which also includes developments in Nantucket, Newport, Litchfield and Mexico.
